Definition of Term

dried fish
(English) Fish preserved by removal of sufficient moisture to retard or prevent the growth of bacteria and moulds. Bacterial activity ceases when the water content is less than about 25%. Moulds cannot grow when the water content is below about 15%. (See also: dehydrated fish)
